Anjeer Barfi is a barfi which is loaded with a variety of nuts and dried figs. Figs is the base of this Indian sweet and lends its sweetness and hence makes it sugar-free and guilt-free.

Anjeer Barfi
Ingredients
250 gms dried figs
100 gms almonds
50 gms cashews
50 gms pistachios
1tsp cardamom powder
1/2 tbsp ghee/oil
Method
Wash the figs and microwave with 3-4 tsp of water for 4 minutes.
Let cool.
Grind them in a mixer, till you get a smooth paste. This process should always be done in short bursts.
In a nonstick pan add 1/2 tsp ghee, warm it.
Add the fig paste.
Roast for 2-3 minutes, to remove the stickiness and the moisture. Remove and cool.
Add nuts to this and knead like a dough.
Divide the dough into two and make rolls.
Cling wrap the rolls and refrigerate for 30 minutes.
Cut into slices.
Variation
You can use Dates instead of Figs or a combination of Figs and Dates.
Dates can be ground directly, There is no need to microwave them.
