Theme of the week: Brownies and Muffins
We begin with week 4 and this week I shall be posting Muffins and Brownies. The first three days it’s muffins.
For today I have chosen Banana walnut muffins. I do not eat bananas, so I hardly use them in my baking, they definitely lend a prominent flavor to the bakes. Of course it is a very good egg substitute. I made these muffins when my granddaughters came from Japan. They loved them and my daughter was happy that the little one year old was asking for more. She was happy to feed her with these as they would provide her with sufficient energy. Well even I had one of those, but with that chocolate sauce. What do you do to your love for chocolate?
Banana Walnut Muffin
1/2 cup whole wheat flour
1/2 cup oats
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup butter
1 cup sugar
2 bananas, chopped
1/2 tsp vanilla essence
1/2 cup finely chopped walnuts
3 tbsp milk
2 tbsp oil / butter for greasing
Sieve flour, baking powder, baking soda and salt. Keep aside.
Place the butter in a bowl and beat till soft and creamy.
Add sugar and mix well.
Add the bananas to it and mix well.
Add the vanilla essence, walnuts, milk ,oats and the prepared sieved flours to it and mix lightly till the mixture is smooth and no lumps are remaining.
Pour into greased muffin moulds.
Bake at 180 deg c for 15-20 mins.

I also don't eat bananas and my first 3 days of week 4 are also muffins. Though I do not eat bananas I am liking the flavor of it in bakes. Banana walnut muffins look delicious and how can one resist it with chocolate sauce

My husband likes banana but hates in bakes. Looks like he is not the only one :-)). At least you had it paired with chocolate sauce, I dont think I can convince him to have it with anything!!
Honestly I love banana muffins than berry versions. Banana – Walnut is such classic combo and you can't go wrong there. Wheat & Oats make it healthier.

The pics are so very beautiful. I do agree bananas overpower the bakes but this one will be great for my nephew when he comes down.
