I normally don’t make cookies as no one is fond of these , it is only when my grandkids come I need loads of them . Sometimes I am shocked to see the amount they finish in one go . This time when they came I made different varieties for them so that they could enjoy the home made ones . There were some more varieties too which I shall post later . Since there were a couple of these we played an interesting game where both the kids were blindfolded and had to eat the cookie and guess the name , the kids were smart and could easily guess them all .
These Red Velvet Cookies looked attractive and the kids loved them , they were crunchy and the tiny white chocolate chips made them festive .These cookies are my Day 3 post under the theme Cookies for your Sweet Tooth. You must check out the Red Velvet Cookie with Vanilla Ice cream, where I have used these cookies to make an ice cream candy.
Red Velvet Chocolate Chip Cookies
Ingredients
11/2 cups APF
21/2 tsp cocoa powder
1 tsp cornstarch
3/4 tsp baking powder
1/8 tsp salt
1/2 cup butter
1 cup sugar
11/2 tsp Ener-G egg replacer + 3 tbsp water
12/2 tsp vanilla extract
11/2 tsp food color
3/4 cup white chocolate chips
21/2 tsp cocoa powder
1 tsp cornstarch
3/4 tsp baking powder
1/8 tsp salt
1/2 cup butter
1 cup sugar
11/2 tsp Ener-G egg replacer + 3 tbsp water
12/2 tsp vanilla extract
11/2 tsp food color
3/4 cup white chocolate chips
Method
Using a mixing bowl , stir together the flour , cocoa, cornstarch, baking powder and salt. Keep aside.
In another bowl beat sugar and butter till creamy .
Add vinegar , vanilla essence, egg replacer, water, food color . Beat well .
Stir in the flour mix into the wet mix , stir in half the chocolate chips and retain the rest .
Refrigerate the dough for an hour .
Preheat the oven at 180deg C for 15 minutes
On a lightly greased cookie sheet scoop out about a tablespoon of dough for each cookie and slightly flatten it .
Place them at a distance of 2-3 ” as these cookies will spread .
Bake for 9-10 minutes .
Remove from the cookie sheet and place it on the wire rack to cool.
While the cookie is still warm press in the white chocolate chips in s neat pattern .
Once cool , store in a airtight container .
