Hariyali Saat Dhan ki Roti is a healthy roti made with seven grains . It is enriched with loads of greens like spinach , fenugreek and coriander .
Saat Dhan ki Roti is a popular recipe of Tarla Dalal and while browsing her book on Parathas I decided to give a twist to the paratha by adding greens and some different spices and hence called it Hariyali Saat Dhan ki Roti and chose it for the theme Flatbreads and More .
Saat means seven and Dhan are grains so we are making a roti / paratha using seven grains . I have used wheat , rice , jowar , bajra, ragi , besan and makai / maize flour . I used all in equal proportion , but you can vary as per your choice . I added equal amount of spinach and fenugreek , but these too can vary . Each grain has its own benefits and mixing them with greens takes the roti to a different level altogether . The roti is super healthy .
The rpti is a meal by itself but I wanted to add some protein and fun element too , so served the seven grain roti with a simple daal , Rajasthani Kadhi ,Bharwa Simla Mirch and Samosa Chat . ( yes , Samosa Chat is the fun element here ) .
My daughter was here when I made these and she loved them . She felt there was no need of any kadhi , daal or sabzi . I could have got away by adding yogurt as protein and pickle as fun element !
Hariyali Saat Dhan ki Roti
Ingredients
3 tbsp whole wheat flour
3 tbsp jowar flour
3 tbsp bajra flour
3 tbsp ragi flour
3 tbsp chickpea flour
3 tbsp maize flour
3 tbsp rice flour
1/2 tsp turmeric powder
1 tbsp sesame seeds
1 tbsp coriander seeds, pounded
1 tsp cumin seeds
2-3 green chillies , finely chopped
1/2 cup spinach , finely chopped
1/2 cup fenugreek leaves , chopped
1 /4 cup chopped coriander
4 tbsp curd
1 tsp oil
salt to taste
Method
Combine all the ingredients and knead into a soft dough, using water if required.
Divide the dough into 10 equal portions.
Roll out each portion into a 4-5” diameter disc using flour to roll the paratha.
Cook each paratha over a hot griddle using oil or ghee till both sides are golden brown in colour.
Serve hot.

Your posts makes me nostalgic, I remember this name sat dhan ki roti, taiji used to tell didi to make it in breakfast with chutney. Amazing look must say.
Sometimes I feel even with everything I miss something. Maybe because after marriage I am not in touch with anyone. but childhood memories are my treasure.

I am amazed at how you have made a thali with each of the paratha you have featured Vaishali. I will have to now recreate each of them myself. Everything looks sinful on the plate and with a roti so healthy, why need anything else!. However hats off to your patience and dedication to thalis..:)
