The last in the Prorein Rich Salad series is Tandoori Paneer Tikka Salad . Paneer or cottage cheese is very popular in India . Paneer is to India what cheese is to the rest of the world. It is a slow-digesting dairy protein, which also offers you a good amount of calcium. It keeps you fuller for longer and helps burn more fat. I served the salad on a bed of fresh green spinach .
Spinach is rich in vitamins and minerals, such as vitamin K, folate, iron, vitamin A, vitamin C, potassium and magnesium. It is low in fat and pairing it with other foods can provide you with a complete, nutritious meal. I choose to grill cottage cheese , you could do the same with tofu and combine those protein sources to round-out a balanced protein salad .
This is a delicious salad which if combined with brown rice or our humble roti or paratha turns into a complete meal . The salad can be served at room temperature , or you could chill the spinach bed but please do not serve the paneer chilled , it will become hard and spoil the whole salad .
I took a complete block of 250 gms and cut it into half. I then marinated the two blocks for nearly 8 hours.This gave a very delicious flavor to the paneer , but if you are short on time then you could marinate smaller cubes and then cut them up.
Tandoori Paneer Tikka Salad
Ingredients
250 gms paneer
1 cup mixed bell peppers , cut into cubes
1 large onion, cut into cubes
1 cup spinach finely chopped
1-2 pickled onion rings
Chaat Masala
Marinade
2 tbsp ginger garlic paste
2 tbsp green chutney
4 tbsp curd
1 tsp red chilly powder
1/2 tsp garam masala
1/4 tsp black salt
Salt to taste
Pinch yellow food color
Pinch red food color
Method
Cut onion slices , place them in a jar, add salt , vinegar, few drops red food color and top with water . It will take 2-3 hours for them to get pickled.
Mix all spices ingredients under marinade.
Cut the paneer chunk into two.
Apply the marinade lavishly and let it soak the flavors for 6-8 hours .
Roast the paneer blocks in a grill or a nonstick pan .
Cut the roasted paneer into slices.
Toss the bell peppers and onion cubes in the left over marinade and grill these too, make sure you do not char them .
Serving Style
Spread a layer of finely chopped spinach .
Make sure the spinach is washed very well and left in a colander to remove excess water.
Sprinkle some chat masala .
Spread the roasted peppers and onions.
Arrange the paneer slices.
Place pickled onion rings on a side.
Sprinkle chat masala on the paneer slices and onion rings .
