I love Mexican and I love salads so under the Protein Rich theme and Salads as the sub theme here is a Mexican Salad . Mason jar salads are a wonderful way to present these salads , and they are perfect to grab and go kinds .
While going through these salads I realised that there are a couple rules when it comes to mason jar salads . Most important make sure to put the salad dressing on the bottom and the leafy greens and more delicate food on top and everything else in between that way your salad stays fresh and crisp until you are ready to eat it.
I made the salad with Salsa , black beans . I read somewhere that one cup of boiled black beans has approximately 15 grams of protein. Just remember, if you buy dried black beans, you will need to soak them for at least four hours, and pressure cook before using them . I had my last one cup of these beans from USA , which I finally used.I also used cucumbers , for that I used veggetti and made noodles from it . Next I added some cherry tomatoes which look so pretty . I also added some boiled corn and blanched broccoli , finally I topped up the salad with some grated cheese. Corn and broccoli both are good vegetable protein and cheese a dairy protein.So here we have a great looking healthy Protein Rich jar of salad which you need to empty in a bowl and enjoy.
Mexican Salad in a Jar
Ingredients
1 cup salsa
1 cup black beans , boiled or canned
2 cucumbers
Few cherry tomatoes
1 cup corn , boiled
1 cup broccoli, blanched
Few black olives
Cheese , grated
Method
Take two jars and divide all ingredients between the two jars .
We will layer this salad , beginning with salsa.
Next add spiralized cucumbers , beans, halved cherry tomatoes , boiled corn , blanched broccoli and finally grated cheese .
Close the lid of the jar and when you wish to serve , just invert the jar into a bowl .
Notes
You could add a handful of nuts and seeds too.
Dont miss the cheese as it enhances the salad.
You could sprinkle some dry seasonings while layering.

Ok thank you you solved the mystery as to why my mason jars looked ugly. I mixed it all up then filled.
