Seasonal: Summer

A cool drink with lots of crushed ice, is what I look for in the peak heat of summers.

Today I have three special drinks which are totally Indian Drinks.


Khus sharbat

Badaam Sharbat
Paan drink 
Khus is a simple sugar syrup with food color and essence.Quick , easy to prepare, this can do wonders to mock tails, or served in milk , mathas, curds or even water. 

Badaam or Almond Sharbat is mom’ s specialty, every summers I get a few bottles from her, but last summers I made it a point to learn from her. This has a amazing taste of almonds and a mild fragrance of cardamons, very very addictive.The concentrate can be preserved for nearly six months if refrigerated.This can be mixed with milk or water. 

Paan drink is a royal treat for your taste buds.You can give your meal a kick start with this one.It has a unique refreshing flavor, which is highly dominated by betel leaves.The rose petals add to the aroma and beauty of this drink. It has to be prepared fresh for that beautiful color and flavor. 


Khus Sharbet

1000 ml water

1800 gms sugar

15 gms citric acid 
Green food  color
Khus essence
Dissolve sugar in water.
add citric acid.
Boil for 10 minutes.
Strain and cool.
Add essence and color.
Badaam / Almond Sharbat
1000 ml water
1 kg  sugar
300 gms almonds, soaked and peeled
30 cardamons
1/4 cup milk
combine sugar and water and boil for 10 minutes.add milk, let boil.
This will release out scum which might be dirty, remove it.
Strain the syrup.
Grind almonds to a very fine paste using minimum water.
Grind cardamons to a fine powder.
Add almond paste and cardamon powder to the strained syrup and le boil till all the moisture has gone, this shall take about 8-10 minutes.
Cool and pour into bottles.

Paan Drink
2 chopped paan leaves
2 tbsp gulkand
1 tsp fennel seeds
Blend the chopped leaves, gulkand and fennel seeds .
Add crushed ice and water, blend again.
Pour into glasses.
Garnish with rosé petals.

  1. As almost always, I am out of words to express my delight at these delicacies! all three drinks look absolutely gorgeous and so perfect for summer. Paan sharbat is so innovative. We have paan leaves here in TVM, let me see whether I can get hold of gulkand…

  2. paan sharbat, never heard of it, your mind really works amazing wonders of food, and what a visual treat the pictures are, they almost make you drool, perfect coolers for summer

  3. I had no idea that almond on could be preserved for longer as the lemon ones. This is on my to do list now. Honestly I haven't tried any of the three. All look colorful.
