Matar ki Tehri is one of the Awadhi names given to Biryanis. Yellow rice is made with aromatic pure ghee. This Tahiri has fresh green peas and tastes absolutely divine.
Day 2 under Special Theme I have another of my Thali recipes. Today it is Matar ki Tehri from Uttar Pradesh. Knowing my passion for cooking my school buddies share their favourite recipes with me. This Mattar ki Tahiri is one such recipe. Ajay is into films and very fond of cooking, this recipe is his grandmother’s and my family loved this version of peas and rice. Here are some more recipes from this state.
The recipe calls for fresh peas, but you could definitely use the frozen ones too. Obviously the first preference is fresh winter peas as they are sweet in taste and have a beautiful green colour. The Tehri has to be rich in ghee to get the best of this UP ki Tehri.
Matar ki Tehri, Uttar Pradesh Special
Ingredients
11/2 cups basmati rice
3-4 tbsp oil
1 cup fresh green peas
Pinch sugar
1 tsp turmeric powder
1 tsp chilly powder
Salt to taste
Method
Heat oil.
Add the fresh peas, sauté for 2-3 minutes.
Add a pinch of sugar.
Now add the rice, turmeric powder, chilly powder and salt and sauté.
Add 3 cups of water and transfer the rice to a rice cooker and cook.
Alternatively, you could cook on the stovetop , after adding water, let the rice cook on full flame till 80% done.
Simmer the gas, cover the rice and place a heavy object on it, the rice will be done in 3-5 minutes.
Fluff up the rice and enjoy the Tehri.

Its what we call matar bhaat in Gujarati. Ghee is a must or it doesn’t taste like tahiri.
