Paalak Mattar ki Khichadi is a healthy and nutritious one pot meal with rice , lentils and greens . This meal is a comfort meal at the same time very delicious with a flavour of garlic .
My husband is a great fan of Khichadi and these Khichadis are made very often for dinner . Normally he prefers a lot of mixed veggies and I don’t deviate from the regular Vegetable Khichadi which I posted yesterday . It was at a wedding function that they had a counter for Khichadis . Yes you read right at a wedding ! They had a spread of khichadis and it was interesting to taste these . This is one counter which was jam packed . I guess everyone wants light comfort food rather than those fancy dishes .
I made this khichadi while my son in law visited us , as he is very fond of these too . I got my chance to experiment with a new flavour . Spinach and fresh green peas are the highlight of this meal . Garlic enhances the flavour , and I would strongly recommend it , but if you do not like the flavour just ignore it . I like all my Khichadis with pure ghee which lends them a wonderful aroma along with a intoxicating flavor .
The Paalak Mattar ki Khichadi makes a perfect balanced meal by it self but a addition of a raita makes it more desirable . I served it with Cucumber Tomato Raita, but you can choose any raita from Dahi Boondi or Aaloo Anar Raita or just simple plain fresh yogurt .
This is my Day 2 Post under the theme One Pot Meals..

Beautifully presented khichdi…. You have increased the nutrition quotient of khichdi to several notches by adding spinach and peas…. Delicious
Another excellent combination for Khichadi. I can imagine how people would have lined up for the Khichadi counter in a wedding. Those standard menus have become so boring and this one surely makes an excellent change!
What a fabulous combination for Khichadi, dunno why never tried palak khichadi at home. SOunds very interesting and definitely a delicious twist from the usual Khichadis.
With the good amount of ghee the kichdi would have tasted divine .Delicious and healthy kichidi.
Palak matar ki khichdi look very comforting and I can finish it all with dollop of ghee, curd and some chutney.
Another tempting variation of khichdi. Interesting use of spices.
I can’t believe khichdi was served at a wedding as its not considered a good omen. However times have changed and khichdi is one of the healthiest meals. Adding spinach and peas is a good idea and wouldn’t mind with some of that browned garlic on top. Hubby and I too love different kinds of khichdis and will keep your variations in mind when I make some next time.
that toasted garlic must add an awesome flavor
I love garlic flavour in kichdi and the tempering and topping of the roasted garlic must make this kichdi wonderful. The palak and green peas give a nice colour and taste to the kichdi..
Wow loving your khichadi’s , such a tempting click, I am hungry now.
Kichadi at weddings are so rare and I am so glad you got to make something that was served there. My little one loves anything green and he loves kichadi. This might be something that will be his favorite.
So true Vaishali….nowadays everyone prefers comfort food over fancy dishes. Love the addition of Palak to the evergreen khichadi
This khichdi looks so inviting and protein packed meal.
