Vegetable Khichadi is a mix of rice and lentils with a addition of mixed vegetables . The Khichadi is a mushy one pot meal .
Vegetable Khichadi is a regular feature at home , I keep changing the lentil and cooking method for variation . Today’s Khichadi has pigeon pea / toor daal and in equal proportions, which gives the Khichadi a good flavor of the daal . When we had the hotel , our restaurant chef made amazing Khichadi , and even though it was not on the menu we had guests coming in just for Khichadi . He would normally mix the rice lentil and vegetables and pressure cook , but at times would cook rice and daal and later add the veggies . I somehow like this version better .
You can choose the Vegetables , I normally have a mix of beans , peas , potatoes, cauliflower . I avoid carrots as they lend a sweet taste . If at all I add they would be in grated form . Using just potatoes and peas tastes fantastic too . Onion and garlic in Khichadi makes it gourmet , seriously ! The day I have guests I add these two ingredients plus some extra ghee .
Ghee is important in a Khichadi as it gives a beautiful sheen to the Khichadi plus lends a wonderful aroma and flavour . Of course if you are off ghee or a vegan use oil , you will still love this one pot comfort meal .

Vegetable Khichadi
Ingredients
1/2 cup rice
1/2 cup pigeon pea dal
1 tbsp oil
1/2 tsp cumin seeds
1 onion, finely chopped
2 tomatoes , finely chopped
2 green chillies , roughly chopped
1 cup boiled peas, cauliflower and potatoes
1/8 tsp turmeric powder
1/2 tsp red chilly powder
1 tsp kitchen king masala
Ghee for serving
Salt to taste
Method
Wash and soak the daal and rice for 15-20 minutes .
Pressure cook with salt and pinch turmeric powder for 3 whistles .
Open the cooker after the pressure releases.
In another pan add oil.
Add cumin seeds.
Immediately add onions, sauté till translucent .
Add ginger garlic paste and green chillies .
After a minute add tomatoes .
Cook till mushy .
Add the cooked khichadi from the cooker .
Check the consistency , add water if needed.
Mix in the boiled vegetables.
Cook for a few minutes.
Serve with hot ghee .

This is my type of khichdi. I love my khichdi mushy and with lots of vegetables in it. When my mom was alive, I used to ask her to make this khichdi for me and she used to say, ” Maike aa k bhi koi khichdi khata hai.” Love you for reminding me mom’s khichdi, though I can never forget it 🙂

This is one such healthy and well balanced meal,looks delicious and love the consistency of the kichidi.
I love kichadi and in fact this is one of the first meals that I introduced to both my boys. I make it with moong dal. I will give the version with the toor dal soon.

I love one pot meals as they are so easy to make for a quick meal. I have heard about the kichdi your chef made for the meet but I missed it. This one looks amazing and I would love to try it..
Normally I prefer khichdi plain without vegetables but I guess sometimes it is better loaded with veggies and spices. Such comforting meal.
This is my or our type of khichadi, equal proportion and ghee is must. While I was reading your equal proportion is must for khichadi, I was thinking hope she added ghee instead of oil, and bang on. We have a saying “ghee banaye khichadi naam baho ka hoe” :-)…Awesome , tempting and healthy.
A delicious comfy dish. After any short trip to places where Indian food is not easily available, the first thing I want to make when I get back home is khichdi. I too love adding different lentils and vegetables, makes it into a one pot filling and healthy meal.
I usually make this type of khichdi for my lunch and love the flavors. Adding kitchen king masala is new though.
