Paneer Lasooni

Paneer Lasooni is a delicious paneer dish that is dominantly flavoured with garlic. It has a rich creamy gravy made with onions and tomatoes.

Paneer/cottage cheese is an Indian cheese that can be easily prepared at home or store-bought, though I always prefer the homemade one. I normally make paneer from full-fat milk and use 3 litres of milk. A litre of milk normally yields about 200 gms of paneer, so I get a good chunk of about 600 gms, at times a little more too. It can be stored for almost a week.

Wondering why I am talking about Paneer? Well, this week I shall be posting Protein-Rich recipes and for vegetarians, Paneer is one of the main sources of protein. It keeps you full for a longer time and even helps in losing weight. Some time back we did a month-long on Protein Rich Recipes, which featured Kebabs, Biryani’s and even Thalis.

For today I shall share the recipe of Paneer Lasooni. This is a recipe by Sanjot Keer. Recently I am completely hooked on his recipes, they come out really delicious. Paneer Lasooni is dominated by garlic flavour, but yet the taste is excellent. One doesn’t really feel that overpowering garlic flavour. It is very well balanced. Soft chunks of paneer dunked in a creamy gravy made with onions and tomatoes is highlighted with cream, which balances all flavours and at the same time makes the dish very rich. You can enjoy the Lehsuni Paneer as the main course along with some kind of roti or paratha. If you prefer rice, enjoy this Lasooni Paneer with some rice.

Ingredients

Paste

1 tsp cumin seeds
2 cardamoms
3 onions, cubed
8-10 cloves, garlic
Small piece ginger
10-12 cashews
1 tbsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red chilly powder
5 red chillies, dried
500 ml water
Salt to taste

Curry

500 gms paneer
Oil
1 tsp cumin seeds
1” ginger julienned
2-3 green chillies, chopped
1 onion, chopped
1/4 cup garlic, finely chopped
1/2 cup curd
Salt
1 tsp garam masala
1 tsp kasuri methi
3 tsp fresh cream
1 tbsp butter
Chopped coriander

Method

Heat oil in a pan, add cumin seeds.
As soon as it crackles add onion, garlic, ginger and chillies.
Sauté till golden brown.
Add the masala paste and mix well. Fry for few minutes.
Add the curd, salt, garam masala powder and kasuri methi and mix well.
Let it cook till the oil separates.
Check and adjust seasoning.
Add the paneer and mix gently.
Add the cream and then the butter.
Cook for 2-3 minutes and serve hot garnished with coriander leaves, ginger and cream.

  1. I always substitute walnuts or almonds for cashews for health reasons. The gravy is different from my go to recipe, will try it soon sometime!

  2. We love garlic at home. And we use yogurt as one of the ingredients for extra masala. I am going to try this recipe next time I make paneer.
