Faryali Sabudana Khichadi is made from sago pearls , potatoes , crunchy peanuts . It is spicy and slightly sweet street food of Gujrat .
Sabudana are sago pearls , and these are small white grains that are obtained from part of the trunk of a palm tree . These are edible starch pearls and are used in cooking in many countries .The Indian name for sago is sabudana and this Khichadi is very popular in Maharashtra , Madhya Pradesh , Rajasthan and Gujarat . Each state has its own version .
I had always had the Maharashtrian version of this khichadi , which is always made during fasting festivals but this version is very different than the home cooked version.
Here in Gujarat this khichadi is sold on the streets . Normally we have carts which sell this khichadi . They temper and keep the sago and potato ready and when order is placed a few spices and some lemon juice are mixed in and finally the khichadi is topped with aloo chivda , which has loads of peanuts and is spicy as well as sweet . coriander leaves and pomegranate pearls are used to finish off the dish.
The khichadi is really unique and has a burst of flavours . F – Faryali Sabudana Khichadi – Street Food Style
1 cup sago , washed and drained
2 tbsp oil
1 tsp cumin seeds
3/4 cup potatoes , boiled small cubes
Salt to taste
Sugar powder to taste
Combine the sago and ¾ cup of water in a deep bowl, mix well and keep aside to soak for 2 hours.
Heat oil in a non stick pan and add cumin seeds.
As soon as the seeds crackle , add the potatoes, sago and salt .
Mix well and cook on medium flame for two minutes .
Now take a bowl add a portion of the sago khichadi, green chilly, powdered sugar , garam masala ,and lemon juice .
Mix well .
Remove in a serving bowl.
Top with Aloo chivda, coriander leaves .
Finally garnish with pomegranate pearls .
