Matar ki kheer is a milk-based Indian sweet. It is a unique kheer where fresh green peas are used to make the sweet. Cardamom and rose petals take the kheer to another level.
When we talk of Indian sweets, Kheers ranks at the top, right next to Ladoos. I love trying new kheers as they are simple to make and give utmost satisfaction of an Indian dessert. These kheers have simple, and no-fuss recipes. They can be made into totally Indian style just like Tandalachi Kheer or Sago Kheer, at the same time they can give us the taste of a western dessert, like Chocolate Orange Mandarian Kheer or Strawberry Kheer. We can also indulge in some fusion ones like Gulabjaun ki kheer or Boondi ki Kheer.
Today’s Kheer is very unique and is made with fresh green peas. The winter peas are tender and sweet, they are coarsely crushed, sauteed, and then cooked with milk. When I decided to make the Matar ki Kheer I was very hesitant, as I had never used peas in anything sweet. As a result, I made a very small portion. Of course, I repented ! and wished I had made a bigger bowl. It was difficult for the family to guess that the green peas had been added, everyone thought these were cooked nuts!
While making the kheer make sure to add cardamon powder which is a must in all kheers. One can add nuts like almonds and pistachios to the kheer, it will only take the Kheer to a different level. Matar ki Kheer
Ingredients
2 cups milk
1 tbsp ghee
1/4 cup fresh green peas
Sugar as per taste
1/4 tsp cardamom powder
Garnish
Pistachio, chopped
Rose petals, fresh or dried
Method
Coarsely grind the peas.
Heat ghee in a pan and saute the peas till the raw smell disappears.
Always roast in slow flame to retain the freshness.
Add milk and cook till the milk has reduced to a little less than half.
Add cardamom powder and sugar.
Cook for another 3-4 minutes and then transfer the Kheer into serving bowls.
Garnish with chopped pistachio and rose petals.
Chill before serving.
