Shahi Imli Sonth is a delicious sweet and sour chutney that has been made rich with the addition of nuts and seeds. This gives a wonderful crunch to the chutney.
Shahi Imli Sonth
Ingredients
11/4 cups tamarind pulp
1 cup jaggery, grated
10-15 raisins, soaked for 15 minutes
5-6 almonds, soaked overnight, peeled and cut into silvers
5-6 dry dates, deseeded, roughly chopped
1 tbsp seeds( sunflower/pumpkin/melon)
1/4 tsp red chilly powder
1/2 tsp black salt
1/4 tsp roasted cumin powder
Pinch asafoetida
Method
Take a thick bottomed pan and add the tamarind pulp to it.
Place it to boil on medium heat.
As soon as the tamarind boils, add the grated jaggery.
Stir constantly with a wooden spoon for a few minutes till the jaggery melts.
Once the jaggery melts, let the mix boil for 3-5 minutes.
Now add the raisins, almonds, dates and seeds.
Allow the mix to boil till the chutney is thick and coats the back of a spoon.
Add red chilly powder, salt, roasted cumin seed powder and finally a large pinch of asafoetida.
Pour the chutney into a sterilized glass jar, let cool and store.
The chutney shall last you over a month if stored in the refrigerator.
