Vada Pav Bombs is a fusion version of the famous Vada Pav which is the most popular street food of Mumbai .

Vada Pav Bombs
Ingredients
Pav
Dry Garlic Chutney
Green chutney
Vada stuffing
Batter
Vada Stuffing
1 cup boiled mashed potatoes
1 tbsp oil
1 tsp mustard seeds
1 tsp whole coriander seeds
2 green chilly, chopped
Pinch hing
Curry leaves
1/4 tsp red chilly powder
1/4 tsp turmeric powder
1/4 tsp dry mango powder
1/4 tsp garam masala
1 tbsp ginger garlic paste
Salt to taste
Batter
3/4 cup chick pea flour
Pinch baking soda
Salt to taste
Method
Vada Stuffing
Heat oil.
Add mustard , whole coriander seeds,asafoetida , green chilly and curry leaves.
Add turmeric.
Add mashed potatoes.
Add red chilly powder,dry mango powder and garam masala.
Add the ginger garlic paste.
Add coriander.
Mix well.
Cool.
Make balls.
Batter
Combine all ingredients in a bowl.
Make batter using water.
Keep aside.
Assembling the Vada Pav Bomb
Roughly tear the Vada from center, make sure you do not tear it through and through.
Sprinkle dry garlic chutney on one side and green chutney on the other side.
Place the vada stuffing in between , making it a sandwich.
Dip each stuffed pav in this batter so that it coats all over.
Deep fry to a golden brown.
Cut into pieces and serve hot .
