Kulfis are a hit in our house and I love experimenting with them . I love trying kulfis with different sweets and mithais too . This time I used the Nutty Fig Fudge. The fudge is sugar free , it has the natural sugar of figs , though I did add a tbsp of sugar because of milk.
I did not add any nuts as the fudge itself is full of nuts , you need not boil the milk for long too . If you do not have this ready fudge simply make a paste by soaking the figs in warm water and blending till smooth . In that case you shall have to add nuts of your choice . So let’s see how to go about.

Anjeer Kulfi

Ingredients

500 ml milk
1 tbsp sugar
Pinch cardamom powder
4 pieces Nutty Fig Roll
or
4 figs
4 tbsp mixed nuts ( almonds, cashews , pistachios )

Methods

In a heavy bottomed vessel , bring the milk to a boil.

Add sugar and crushed Nutty Fig Rolls.

Cook on slow fire , till the figs have disintegrated .

Add cardamon powder.

( Alternatively, add the fig paste and nuts and boil the milk till it reduces to half.)

By now the milk for kulfi will be thick, pour into kulfi moulds .

Wait till the kulfi is at room temperature.

Place in the freezer to set.

  • Wait till the kulfi is at room temperature.
  • Place in the freezer to set.

  2. That is lip-smacking good vaishali, i have some dried figs, will try this!! Love the idea of adding fig rolls too!!! Great tip when we have too many gift boxes during festivities!
