Jelly Fruit Cake is a vegetarian fresh fruit cake made with agar agar . The cake is burst of flavours , looks beautiful and is very mild and light dessert .
For the third day under the theme Upside Down Recipes , I have this super simple , quick and easy yet attractive and delicious Jelly Fruit Cake .The freshness of the fruit with bright colors popping through the jelly makes this agar agar cake very attractive .
What is Agar Agar ?
Agar-agar is a vegetarian substitute for gelatin which is tasteless , transparent and is used to solidify custards, jelly and many other desserts . Unlike gelatin, agar-agar does not melt easily but remains solid below 50 degrees C.
Agar Agar has different names in different countries , I have been familiar with it since I was a small kid . Mom used to get agar agar strands and dissolve them in milk with cardamom powder and nuts to make China Grass . Japanese call it Kanten and I saw that they used the powder form of it . The Thai use it to make jellys .
While looking for the Upside Down dishes , I came across this Fruit Jelly Cake . It looked so pretty that I instantly decided on it . I tweaked the recipe and used Lychee juice instead of water . A couple of recipes they have used coconut water too . The variations and combinations are many , you just need to get innovative and work on your favourite flavours .
I decided to use Lychee juice for the top layer with fresh fruits where I used black and green grapes , oranges , apples , strawberries and pomegranate . The second layer is with milk , the original recipe used coconut milk to make a vegan dessert , but I have used the regular milk .
It is super easy and quick to make the Jelly Fruit Cake , but it is rather tricky to unmould it . Use 4 toothpicks exactly the height of the jelly mould , insert it at 4 different spots at the sides of the dish.The reason we do this is to push in some air as the jelly gets sucked into the dish with no air, therefore making it difficult to come out of the dish. So once you’ve inserted the toothpicks, flip the dish onto a plate and there you have a beautiful Jelly Fruit Cake .
Yesterday was my daughter in law , Sneha’s birthday and she loved this unique cake for her birthday . My son who is off desserts and sugar was very happy to eat such a light dessert which served the purpose of a birthday cake . They both were really impressed and I was happy that I had made a dessert which pleased the complete family including my hubby who wants me to try it with different flavours .
Jelly Fruit Cake
Ingredients
11/2 cups lychee juice
11/2 + 1 tbsp agar agar powder
11/2 cups mixed fruits
1 cup milk
2 tsp sugar
Method
Chop the fruits into small pieces .
Keep your mould ready , you could use a 7” cake tin or 5 muffin cups . I used muffin cups
Take a cooking pot and add lychee juice .
Add 11/2 tbsp agar agar powder , and stir it very well .
Keep it on medium flame and using a whisk , stir continuously till the juice comes to a boil .
Pour a tbsp of this cooked juice in each cup .
Divide the chopped fruits into 5 portions and add to the cups .
Fill 3/4 of the cups with lychee juice.
Let set for 5-7 minutes .
Meantime add sugar and 1 tbsp agar agar to the milk .
Cook stirring continuously till both sugar and agar agar are dissolved and the milk has come to a boil .
Pour over the set lychee cups .
Let set for 5-7 minutes .
Place in the refrigerator to chill .

- To de mould -
- Gently insert 4 tooth picks on 4 different spots , exactly the height of the pan or cup .
- Place a plate over the cup and flip it over .
