Gajjar Halwa cups with Ice cream are cups made with carrot halwa and filled with ice cream to make a delicious dessert.

September, and we begin with another Mega Marathon. This time we shall post Sweets and Snacks all through the month. You can read more on it here. Week 1 shall feature Sweets. For the very first day I have some Gajjar Halwa Cups !…and with Ice cream. A double dessert!

Gajjar ka halwa is an Indian dessert made with carrots, milk and sugar. This is one dessert which is very popular in the North. we get the typical sweet, juicy red carrots during winters and that’s the best time to enjoy this halwa. Well, we do make halwa quite often, but this time I moulded the halwa into cups. Cups to serve ice cream. The fusion of these two desserts is made in heaven, though traditionally the halwa is served hot with cold ice cream but here both the desserts are served cold and trust me they taste out of the world. One can serve any flavour of ice cream but I wanted to give it a nice colour combination so opted for Badam Pista Kesar.

The cups are easy to make, you just need to mould the Halwa into cups using silicone cupcake moulds. These can be made as soon as the halwa is ready. After moulding place them into the refrigerator for a couple of hours. Once set you can demould and stock them in a box in the frig. Remove these about an hour before the party and serve ice cream in these. You could also serve  Shrikhand. It makes a beautiful dessert for parties which can be pre-prepared. I am sure your guests will be totally floored with it.

Ingredients

1 recipe Gajjar Halwa
Badaam Pista Kesar ice cream
Condensed milk
Boondi ladoo

Method

Using silicone mould put a scoop full of halwa in it.
Press another similar mould into it so that a depression is formed.
This will form a cup.
Freeze these cups.
Remove the cups from the mould.
Before serving brush the edges of the cup with condensed milk.
Crush the laddoo gently.
Sprinkle some ladoo over these edges, this will stick on the edges.
Fill these cups with ice cream.
Garnish with pistachios.

  • Kesar pista ice cream
  • condensed milk

  • Crush the laddoo gently .
  • Sprinkle some ladoo over these edges , this will stick on the edges .
  • Fill these cups with kesar pista ice cream .
  • Garnish with pistachios.
