Muesli Cookies

These Muesli cookies are from the batch of cookies that went to US for my friend’s grand kid . The cookies are simple and can be turned vegan as they have very little milk which can be substituted either with soy or almond milk . They have no butter and can be made with any cooking oil that you use . You could use any variety of muesli.

I am glad that I am managing with my drafts since a couple of months . I have barely cooked or baked since the past couple of months . Life has been rather busy , with doctors , hospitals ,travel and weddings ! Strange combination , right ? Seriously , travel and weddings are great fun but doctors and hospitals are terribly irritating and tiresome . I am hoping and praying that this is the end of hospitals for this year and in the coming years . Suddenly lot of things take a back seat .

Anyway one has to be positive and look forward in life and I am actually looking forward to our April Mega Marathon . I know we have a good four months to go , but we need to plan , right?

Back to Bakeathon and Museli Cookies, here’s the recipe .

Muesli Cookies

 

Museli Cookies

Ingredients

1 cup all purpose flour
1/2 cup wheat flour
1/4 tsp baking powder
1/3 cup sugar powdered
1/2 cup museli
Pinch salt
3 tbsp oil
2 tbsp milk
1 tsp vanilla essence

Method

Grind the museli coarsely.
Combine oil, milk, vanilla essence and sugar .
Combine flours , baking powder and salt.
Mix the wet ingredients to the dry , forming a dough .
Divide the dough into 10-12 balls.
Press gently over a greased and lined baking tray .
Bake for 10-12 minutes at 180 deg C.

Museli gives excellent texture and crunch to these cookies , the cookies could be made vegan by substituting milk with soya or almond milk. healthy and delicious these cookies are crisp and crunchy.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Very crunchy muesli cookies… though my reasons are different that yours, I am too managing my blog and the bakeathon with my drafts… I made hay while the sun shined, and now that I am totally off from cooking or just plain lazy to try anything new, my “magic folder” is really helping me keep the blog active… hehe… I used to wonder what I would do with all the pictures I have now I am glad it is helping me a lot!

I am seriously slightly J of you, PJ and Rafeeda when I hear about the magic folder!..wish it happens with me unlike the hurried early or late night cooking I do for the blog..but then life happens!..I hope all that you wished for happens in the new year Vaishali..take care..these muesli cookies sound so good, I could include some chocolate chips and give the boys..:)
