
Neapolitan Cake
Ingredients
11/2 cups all purpose flour
1 cup curd
3/4 cup sugar
1/2 tsp baking soda
11/4 tsp baking powder
1/2 cup oil
1 tsp vanilla essence
Chocolate layer
2 tbsp cocoa powder
Strawberry layer
3-4 fresh strawberries
Few drops pink food color
Filling and Frosting
Sugar syrup
Whipped cream
Ganache
Method
Sieve the flour.
Cream the sugar and curd.
Add baking powder and baking soda.
Keep aside for 5 minutes.
Add oil and vanilla essence.
Gradually add the flour, blending with the wet ingredients.
Divide the batter into three bowls.
You shall need three 4″ round baking tins.
To the first bowl add cocoa powder, mix well.
Pour in a greased and lined tin and bake.
To the second bowl add pureed strawberries and pink food color, mix well and pour in another greased and lined tin and bake.
The third batter will be baked as it is. Pour it into the third tin and put to bake.
Bake at 180 deg C , bake for 10-12 minutes or until a skewer comes out clean.
Assembling the Cake
Let all three cakes cool down.
Place the chocolate cake on the turn table.
Sprinkle some sugar syrup to moisten the cake.
Spread some whipped cream on the chocolate layer.
Place the strawberry layer.
Similarly sprinkle sugar syrup on this layer too.
Spread whipped cream.
Place the third layer, which would be vanilla.
Spread another layer of whipping cream.
Pour chocolate ganache over it.
Let the ganache drizzle down the sides.
Let the cake set in the frig for an at least one hour.

Picture from the top looks so stunning Vaishali!..I know you are always so hard on yourself and push to get things very perfect, I would say good for us..:)..anyway I have always felt that strawberry loses its colour, so I guess we have to use food colour…anyway the cake looks very soft and spongy, I am so J of your neighbour!
