North Indian Thali

North Indian Thali is a Thali which has assorted and selected dishes from different regions of North Indian states of India.

 

Ideally, I should have planned a thali, picking each North Indian state and compiled the Thali, but this is one thali that I made for a formal dinner, so could not plan the way I wished. However, a North Indian Thali with dishes from the Northern part was planned for our BM #100. It was a thali which was a real royal thali and it was so much fun creating it.

 

 

Today’s North Indian Thali has all the dishes that are our standard menu for guests. Meals normally begin with snacks and Tikkis are a favourite in our house. Matar ki Tikki is mom’s recipe, which we so dearly enjoy. A paneer dish is a must, this Shahi Paneer recipe has been shared by my younger daughter and it is mandatory for her to cook this for us whenever she is in India. You can imagine how delicious it must be.

 

Next comes a Dal. Well since hubby prefers a light Dal it is perpetually Moong Dal. I give it a twist every time we have a guest . For a dry side dish Bhindi or Aloo are made, today it is Bhindi! A semi gravy dish is a must so it can be either some kind of leafy Palak Corn / Palak Aloo or Methi Aloo or Bharta in season. I picked Turiya ka Bharta today.

 

When we talk of accompaniments, some kind of Dahi Vada or Raita is a must. Today we have Mirch ke Dahiwade which are super delicious .(by mistake I have tagged them as Dahi Gujiya, sorry about that ! )The meals are incomplete without rice and bread we have Ajwain Parathas and a rich Shahjahanvi Biryani. In fact, the biryani takes the cake. It is a super flavorful one.

 

To any meal, the finale is always a dessert. For today its a Royal Custard. The vanilla custard is a no-frill dessert. To make it exotic saffron has been added along with nuts and Rose petals.

  1. First of all I love that copper serving set but the meal looks brighter in the second thaali. 🙂 It is good that you have a set menu for get togethers and everything looks and sounds delicious. Somehow I feel like I am being repetitive in my comments. But what to do when you dish out one delicious thaali after another?
    I remembered a funny thing when I read the list of states you mentioned. While I was in India, it was common as a south Indian to assume what was not south to be north. Now older and wiser I thought I knew better but until recently I assumed Bihar was in north and Rajasthan in west. 🙂

  3. A thali with assorted dishes from north India is a brilliant idea. I still remember the thali that your made for us during the meet. Simply amazing. I bought ker and sangri for my Rajasthani thali but never made it. Let me now go find the recipe for it on your blog.

  4. I am just a fan of your thalis, each and every thali I see I am like wow. North Indian food is definitely close to me, and your thali is like, wish I could get some now.

  5. Vaishali how you make such exotic thalis with ease with so many dishes in each and everyone. Whole thali looks absolutely scrumptious and includes so many favorites of mine.
