Missi Roti is a Indian flatbread from the state of Rajasthan . The bread is made from a mix of chickpea flour and wheat flour along with herbs and spices .
Rajasthan is very famous for its amazing breads , the Khoba Roti , Rajasthani Tikar are my personal favourites .Since this state is in the dessert region scarcity of water and fresh green vegetables have all had their effect on cooking food.They would cook food that could last for several days and could be eaten without heating . Well with the current scenario, vegetables might not be grown, but the availability is there for sure.This Missi Roti too can be enjoyed for 2 to 3 days.
Missi Roti is a very flavorful bread and is a common feature in Rajasthani homes . We even see that it’s served in most restaurants . The bread is slightly heavy , so carom seeds are strongly recommended . There are a couple of variations that one can make while making it . Coriander can be substituted with fenugreek leaves . Both fresh and dry would work well . Adding turmeric gives Missi Roti a nice colour , but I actually forgot to add it , so the colour is a little dull . Even when it comes to spices garam masala and red chillies can be added , I have not used as I preferred a subtle flavour and I don’t like breads to be spice dominated when eating with a curry.
Rajasthani ‘s lavishly slather the Missi Roti with ghee , one can say it literally floats . I have smeared the ghee but not lavishly , also chickpea flour absorbs it really fast .

Missi Roti
Ingredients
1/2 cup chickpea flour
1/2 cup wheat flour
1 tsp oil
2 green chillies
1/4 tsp carom seeds
Few coriander leaves , chopped
Salt to taste
Method
Mix both the flours .
Add salt , carom seeds ,oil , green chillies and coriander leaves .
Mix the flour well .
Gradually adding warm water bind the dough.
Pinch out little larger than lemon sized balls and roll into a roti .
Roast on a griddle , till you see black spots on it .
Smear with ghee and serve hot .

Love this traditional flatbread from Rajasthan. It makes a great meal even with only some dahi on the side.
