
Mashed potatoes are one of our favourite , but I avoid them because of butter . When Valli announced Mashed as our theme for BM, I thought this is my chance to enjoy them and picked the theme . This post is also a part of the annual event at Bakeathon .
This time I wanted a variation in the mashed potatoes , so I added some cheese and milk . The milk should just make the potatoes very soft , runny to be precise . After baking these they taste stunning . A bit of fresh broccoli adds to the color and nutrition to the dish .
Baked Mashed Potatoes with Broccoli is a simple and quick dish to prepare , but if the potatoes are not freshly boiled it’s taste is not as good. with freshly boiled potatoes, the dish tastes absolutely amazing. in fact I try to boil fresh potatoes for practically all dishes with boiled potatoes, but at times I use these from frig also, I just refresh them by immersing them in boiling water for 10-12 minutes.Make sure you cover the pot while the potatoes are resting in the hot water.

Baked Mashed Potato & Broccoli
Ingredients
2 large potatoes , boiled
4-6 broccoli flowers, blanched
1 tsp butter
1 garlic clove, chopped
1/2 cup milk
2 tbsp cheese, grated
Pepper to taste
Salt to taste
Method
Peel the freshly boiled potatoes and mash them.
Melt the butter and cook the garlic till pink.
Add the mashed potatoes and sauté for a minute.
Gradually add milk, cheese , salt and pepper .
Transfer into a baking dish , arrange the broccoli flowers.
Bake in a hot oven till the top is slightly crisp .
This should take about 15 minutes at 180 deg C.

This is an interesting way to serve mashed potato. Baked mash potato looks amazing and am sure would be a crowd pleaser.
