Today is the last day of Baking around the World and though the alphabet Z is a scary alphabet when it comes to A-Z challenges, for me it was a breeze as Zebra Cake is one of the most popular cakes. The cake had been on my mind since a very long time wonder why the delay.
The Zebra Cake is a common delicacy in Africa. It is a unique fact that Zebras being protected , Zebra cakes are still legal in many countries. These are very popular in America and are sold as snack cakes . One of the most famous manufacturing company is Little Debbie.
The zebra cake is a simple work of art and patience. We need vanilla and chocolate batters in equal portions and then have to pour them in concentric circles one by one. This is where patience comes in. After all the batter is used up bake the cake and after it is done, wait for a while for the cake to cool. And now when you cut the cake you see those beautiful stripes.
The stripes should be nice and dark and to get them dark one must add some coffee powder to the chocolate batter.
Zebra Cake
Ingredients
11/2 cups all purpose flour
1 cup curd
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 cup cooking oil
1/2 tsp vanilla essence
2 tbsp cocoa powder
1 tsp coffee powder
1/2 cup milk
Method
Sieve flour, baking powder, baking soda.
Mix curd, sugar powder, vanilla essence, milk and oil.
Mix the dry ingredients to the wet and make a smooth batter.
Divide the batter into two parts.
Add cocoa and coffee to one.
Take about 2 tbsp batter of vanilla flavour , then on top of the vanilla pour 2 tbsp of chocolate batter.
Similarly finish all batter using it alternatively. You shall see concentric circles are formed.
Tap the tin gently and place the cake in a preheated oven.
Bake at 180 deg C for 30-35 minutes or till a skewer comes out clean.
Remove the cake and let it cool for 15 minutes.
De mould the cake.
Cut into wedges and you will see beautiful zebra stripes.
My cake turned out super moist with beautiful stripes and I was happy to see the expressions of my family members, they were literally fascinated by these stripes. My son raised an eyebrow and asked if I had actually baked it…ha ha..Not that he had doubts. It was a happy day and I know that good looking food as well good tasting food makes everyone happy.
