Amritsari Aloo Tikki Choley

 Aloo Tikki Choley is a lip-smacking street food from the streets of Amritsar , Punjab . It makes a delicious  platter with a patty, chickpeas and chutneys.

 

We are starting a new A to Z series from Jan 2020 and through the whole year. It’s an interesting theme and we are going to have this as the regular BM theme . We can pick any particular category and blog with that alphabet starting from Jan until Nov. Now choosing a category is a task ! My first inclination is always towards Street Food , but this time I decided on Regional States where I shall pick one state and cook three dishes .

 

These could be traditional recipes or Street Food or fusion , but from one state.
So my theme for A to Z shall be Pick One State and Make Three Dishes .I  shall begin with Punjab and I have picked three dishes from Amritsar. I shall be cooking with the alphabets A , B and C for the month of January.

 

Amritsar is a food hub and I love this state for it’s rich food , Golden Temple and the Shopping ! The food here is full of dairy , the Punjabis use lots of milk , butter and ghee. practically everything is cooked in ghee and the parathas are slathered with butter . It is one of our favourite cities and we love to explore it .

 

Aloo Tikki is a patty made with potatoes , deep or shallow fried . This particular tikki is kind of fusion . Pradnya had shared this recipe , and it was one of the dishes which was a part of our North Indian Thali at the BM 100 Meet . I have given slight twist and served it with Chole .

 

Aloo Tikki Chole is kind of staple food for Punjabis , Chole Chawal , Chole Poori , Chole Kulche , it’s all about Chole ! They can serve Chole with just about anything ! So for today I have a Aloo Tikki served with Chole.
Amritsari Aloo Tikki Choley

Aloo Tikki Chole

Ingredients

Aloo Tikki

4 potatoes , boiled
2 slices bread
2 tbsp chickpeas , boiled
2 tbsp cottage cheese , finely cubed
1 tbsp coriander leaves
1/2 tbsp mint leaves
1/2 tbsp kasoori methi
1/4 tsp kitchen king masala
2 green chillies , finely chopped
Salt to taste

 

Chole

2 cups chickpeas , boiled
2 tbsp ghee
1 bay leaf
1 big cardamom
1/2 tsp carom seeds
2 onions , finely chopped
1 tsp coriander powder
1 tsp red chilly powder
1/2 tsp black salt
1/2 tsp garam masala
1/2 tsp roasted cumin powder
1/4 tsp black pepper
1 tbsp ginger juilliene
1-2 green chillies , roughly chopped
2 tomatoes , purée
1 tbsp tamarind water
Salt to taste

 

Chutney

1/2 cup coriander leaves
1/4 cup mint leaves
3-4 green chillies
Tamarind water

Other ingredients

Onion slices
Fried green chillies
Pickle

 

Method

Aloo Tikki

Mash the boiled potatoes while they are warm , make sure you do not grate them .
Add all the ingredients , except chickpeas and cottage cheese cubes .
Once mixed well add the chickpeas and cottage cheese cubes and give a gentle mix .
Pinch out balls , roughly a orange size .
Flatten these balls and fry them on a griddle .

 

Chole

Warm the ghee in a pan.
Add bay leaf , cardamom and carom seeds.
Add onions , sauté till almost pink .
Add all the dry spices , ginger and green chilly .
Sauté on slow flame till the spices are well roasted and a wonderful aroma is released .
Add the boiled chickpeas .
Sauté again .
Add tomato purée and let cook on slow flame till all the moisture is dry .
Add tamarind water .
Add additional water to adjust the gravy .
Simmer and cook for a 4-5 minutes for spices to infuse well with the chickpeas .

 

Chutney

Blend everything to a watery chutney .

 

Assembling the Aloo Tikki Chole

Place two tikkis , serve a big ladleful of hot chole on the side .
Place chutney on the side and on the chole .
Serve garnished with coriander leaves , fried green chilly and pickle .

Aloo Tikki

  • 4 potatoes boiled

  • Pickle

Instructions

Aloo Tikki

  1. Oh my, what a fantastic theme and I know it is something very hard to come up with alphabets from the same state Vaishali. I am super thrilled and can’t wait to see what all you have picked up. I was thinking you would do Street food, given how much you love that them. But then, by now you must have covered all possible street food known..:)…this aloo tikki choley looks and sounds so yummy…What Pradnya made was so good, so naturally, along with chole, it would have been so delicious! what a feast to eyes!
