The September Mega Marathon with Protein Rich theme has been a great learning experience . I had never bothered to read so much about Protein , but now I like to update myself on this topic . While reading on Apricots , I learnt that they are a good source of protein but they have to be the dried variety, as fresh apricots don’t yield the same amount of protein. One finds that with most dried fruit their values are concentrates.
Apricots are also an excellent source of Vitamin A, which acts as an antioxidant within the body , they have a fair amount of potassium too which helps in maintaining blood pressure .
Today’s energy balls have a base of apricots and they are enriched with walnuts, almonds and flaxseed .Almonds are an excellent source of protein, fiber and heart-healthy fats , walnuts provide protein too besides being a rich source of dietary fibre . The flax seeds are very rich in protein . This small seed can do wonders , you can read about it’s nutrition facts here .
The benefit of eating fruit to supplement our protein requirements is that we will almost always be getting extra benefits from antioxidants and minerals, as well as fiber. These energy balls increase satiety, or a feeling of fullness after one of these balls at breakfast I could easily go on till lunch . They are simple to make , easy to grab . I would call it No Fuss Breakfast or On the go snack.
Apricot Energy Balls
Ingredients
11/2 cups dried apricots
1/2 cup raisins
1/4 cup almonds
1/4 cup walnuts
3 tbsp desiccated coconut
1 tbsp flax seed
1 tsp vanilla essence
Method
Put all ingredients in a food processor, blitz till it all comes together .
Make lemon sized balls .
Store in a airtight container.

Apricot is the number one fruit source of protein and I love it. Those flax apricot balls are amazing.

I agree Vaishali. This marathon has been such a learning experience. Didn’t know about protein content of dried apricots. These energy balls look fabulous and I want to totally grab them off the screen. Perfect remedy for mid afternoon hunger pangs.
