Seyal Fulka

For Day 2 I have Seyal Fulka . This is a Sindhi breakfast and one of my mil’s speciality . After she has gone we have hardly made these . All my kids are really fond of these , but since the girls are not here we hardly remember making them. It was my son who requested for these and since they fitted the theme I clicked the pics .

Seyal Fulkas have many versions , I have posted the Seyal Maani , Hara Samosa and now these Fulka . These were originally made from left over chapatis but with the present scenario we hardly have left overs so make fresh chapatis, but it’s perfectly okay to make them fresh .

A stuffing for these fulkas is made and then these are roasted on a tawa for further cooking and finally finishing them for a crisp exterior and a soft interior . Let’s check the recipe

Ingredients

6 chapatis

Stuffing

2 large onions, grated
1 tomato finely chopped
2 tbsp garlic, well pounded
2 green chilly , pounded
1/4 cup , coriander , finely chopped
1 tsp red chilly powder
1tsp dry mango powder
Salt to taste

Method

Mix all ingredients mentioned stuffing.
Check the spices and adjust according to taste.
Divide the stuffing into six parts.
Place a chapati on the plate spread 3/4 of the stuffing on it .
Fold the chapati .
Spread the 1/4 saved from 1 part of the stuffing .
Now fold the chapati into a quarter .
Similarly make the rest of chapatis.
Heat a griddle , grease with oil and place these chapatis.
Let Cook on simmer , till the side is crisp .
Flip over and cook the other side too , make sure it is crisp.
Once both sides are crisp these are ready to eat .
These will have a soft interior due to the juices oozed out by onions, tomatoes , but a crisp exterior .

Left over cahpati's get a delicious make over by a flavorful stuffing of onion, garli, ginger and tomato.The Fulkas have a crisp exterior and soft interior.

  1. Looks like this is a perfect recipe to make with leftover chapati and what a nice way to use up the leftovers. The stuffing and the finisged fulka (seyal fulka) are delicious!

  2. That is a superb way to use up leftover phulkas! I understand that the stuffing is raw and all the cooking is done on the tawa between the layers of phulka, right?

  3. I am visualizing myself having these parathas with tea… Good u posted before september…. A2Z flatbread challenge :))))))) I am thinking of enrolling for it.
