Orange Crinkle Cookies are delicious , soft , yet crunchy with a wonderful flavor of fresh orange juice .
Orange is one of the fruit flavours that I am fond of . Definitely chocolate takes the priority at all times , but if I had to choose a fruit flavor , it is definitely something citrusy .These cookies have been in my drafts since one year ! I made them last year when hubby was travelling to US for my nephews wedding . It’s sad that I couldn’t go , due to health reasons , but I made sure he carried some edible gifts for the family there .
My cousin who is a big time follower of my blog always appreciates my recipes and is very fond of cookies . So , I decided to send him a pack of cookies . I made four variations , out of which I shall be posting three this week for the theme Christmas Goodies . All the cookies were very different and they made a good assorted cookie box .
The orange crinkle cookies are absolutely delicious , and they look pretty with that snowy effect done by icing sugar . Fresh orange juice makes them really flavorful . The use of chickpea flour gives the cookies a very unique and pleasing flavor . While making these cookies one really doesn’t have to go and get ingredients , and these are butterless cookies , which are perfect for vegans too .

Orange Crinkle Cookies
Ingredients
11/2 cups flour
1/2 cup chickpea flour / besan
1 tablespoon corn flour
pinch salt
1/2 cup oil
1/2 cup sugar
1/4 tablespoon baking soda
1/2 teaspoon baking powder
1 teaspoon orange zest
Method
Grate the orange peel to get zest . Make sure not to grate the white pith .
Remove the juice of the orange .
Strain the juice .
In a bowl , mix together orange juice , sugar and olive oil .
Whisk till the sugar dissolves .
Sieve the flour, besan , corn flour , baking powder, baking soda . Mix well .
Add the orange zest , mix well .
Now add the flour and knead to a soft dough .
Pinch out lemon sized balls and arrange them on a baking tray . Make sure to flatten the balls . Keep distance between the cookies .
Bake at 200 degrees C for 20 – 25 minutes .
Remove the cookies , let cool on a wire rack .
Once cool sprinkle icing sugar and store in a airtight container .

Orange crinkle cookies look so beautiful. Adding besan in cookies is new to me, must have tasted great.
